Mexican White Trash Casserole

1. Preheat the Oven:

Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish to prevent sticking.

2. Prepare the Filling:

In a large mixing bowl, combine the cooked chicken (or ground beef) with the cream of chicken soup, Rotel tomatoes (with juice), sour cream, milk, taco seasoning, and 1½ cups of shredded cheese. Stir until everything is well mixed and creamy.

3. Layer the Casserole:

Spread half of the crushed Doritos evenly in the bottom of the prepared baking dish. Pour the creamy meat mixture over the Doritos and spread it evenly. Top with the remaining Doritos and sprinkle the rest of the shredded cheese on top.

4. Bake:

Place the casserole in the preheated oven and bake uncovered for 25–30 minutes, or until the cheese is melted and bubbly and the top is golden brown. The Doritos will crisp up slightly while the filling stays creamy and rich underneath.
