Snow-Kissed Cranberry Orange Cupcakes

🛒 Ingredients:
For the Cupcakes
• 1 ½ cups all-purpose flour
• 1 cup granulated sugar
• 1 ½ teaspoons baking powder
• ½ teaspoon baking soda
• ¼ teaspoon salt
• ½ cup unsalted butter, softened
• 2 large eggs

• ½ cup sour cream
• ¼ cup milk
• 1 teaspoon vanilla extract
• Zest of 1 large orange
• 1 cup fresh cranberries, halved
• ½ cup white chocolate chips
For the Frosting
• 8 oz cream cheese, softened
• ½ cup unsalted butter, softened
• 2 cups powdered sugar
• ½ cup melted white chocolate (cooled slightly)
• 1 teaspoon vanilla extract
👩‍🍳 Directions:
1️⃣ Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with cupcake liners.
2️⃣ Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined.
3️⃣ Cream Butter and Eggs: In another bowl, beat the softened butter until creamy. Add the eggs one at a time, mixing well after each addition.
4️⃣ Combine Wet Ingredients: Stir in the sour cream, milk, vanilla extract, and orange zest until fully incorporated.
5️⃣ Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Gently fold in the halved cranberries and white chocolate chips.
6️⃣ Bake the Cupcakes: Spoon the batter into the prepared muffin pan, filling each cupcake liner about two-thirds full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely in the pan before transferring to a wire rack.
7️⃣ Prepare the Frosting: In a medium bowl, beat the softened cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar, mixing until combined. Pour in the melted white chocolate and vanilla extract, blending until the frosting is fluffy.
