Easy Rocky Road Fudge
The Ultimate No-Fuss, Crowd-Pleasing Treat

Rich, creamy chocolate fudge loaded with fluffy marshmallows and crunchy nuts — this classic Rocky Road Fudge comes together in under 30 minutes with zero candy thermometer required!
Prep Time: 10 minutes Chill Time: 2 hours Total Time: ~2 hours 10 minutes Yield: 36–64 pieces (depending on size)
Ingredients
- 2 cups (12 oz) semi-sweet or dark chocolate chips
- 1 can (14 oz) sweetened condensed milk
- 2 tablespoons unsalted butter
- 1 teaspoon pure vanilla extract
- 2 cups mini marshmallows (or large marshmallows cut into pieces)
- 1 cup chopped walnuts or pecans (lightly toasted for extra flavor, optional)
- Optional add-ins: extra chocolate chunks, dried cherries, or a pinch of sea salt on top
Instructions
- Prep the pan Line an 8×8-inch (20×20 cm) baking dish with parchment paper or lightly grease with butter. Leave some overhang for easy removal.
- Melt the chocolate base In a medium saucepan over low heat, combine the chocolate chips, sweetened condensed milk, and butter. Stir constantly until completely smooth and melted (about 5–7 minutes). Do NOT rush with high heat — chocolate can seize or become grainy.
- Flavor it Remove from heat and immediately stir in the vanilla extract.
- Add the goodies Gently fold in the mini marshmallows and chopped nuts. Work quickly but carefully — you want the marshmallows to stay fluffy, not melt.
- Spread & chill Pour the mixture into the prepared pan and smooth the top with a spatula. Optional: Press a few extra marshmallows and nuts on top for that classic rocky look. Refrigerate for at least 2 hours (or until firm).
- Cut & enjoy Lift the fudge out using the parchment overhang. Cut into small squares (it’s rich!). Serve immediately or store.
Pro Tips for Perfect Fudge Every Time
- Use good-quality chocolate — it’s the star of the show.
- Toast nuts lightly in a dry skillet for deeper flavor.
- For cleaner cuts, run your knife under hot water and wipe dry between slices.
- Want extra decadence? Drizzle melted chocolate or caramel on top before chilling.
Storage
- Room temperature: Up to 5 days in an airtight container (cool place).
- Refrigerator: Up to 2 weeks.
- Freezer: Up to 3 months — wrap individual pieces in wax paper and store in a freezer bag. Thaw at room temp.
