- Marinate the Shrimp:
- Place peeled and deveined shrimp in a mixing bowl. Add chipotle chili powder olive oil minced garlic freshly squeezed lime juice salt and black pepper. Toss thoroughly so every shrimp is evenly coated with marinade. Let sit on the counter for ten to fifteen minutes The wait helps infuse the shrimp with flavor and makes them juicy.
- Cook the Shrimp:
- Set a large skillet over medium-high heat Do not crowd the pan or the shrimp will steam instead of sear. Place marinated shrimp in a single layer Cook for two to three minutes on one side until lightly browned then flip and cook an additional two minutes until pink and opaque. Transfer immediately to a plate to avoid overcooking which makes shrimp rubbery.
- Warm the Tortillas:
- While the shrimp cooks heat each tortilla individually in a dry skillet or directly over a gas flame until warm and soft Turn once for even heating. Alternatively wrap tortillas in a damp paper towel and microwave for thirty seconds until pliable.
- Assemble the Tacos:
- Lay tortillas on a board or plates Place a small handful of shredded lettuce or cabbage on each tortilla Add a few cooked shrimp per taco Spoon a bit of diced tomatoes or fresh pico de gallo on top Sprinkle with crumbled queso fresco or feta and finish with a shower of fresh chopped cilantro.
- Serve:
- Arrange tacos on a platter or serve right off the board Offer lime wedges for squeezing plus any optional toppings like a dollop of sour cream or avocado slices Eat immediately while warm and fresh.

There is something electric about the way lime and chipotle bring shrimp to life The first time I made these tacos the scent of garlic and lime clung to my kitchen for hours My youngest still calls them magic tacos
Storage Tips
Leftover shrimp keep best in an airtight container in the fridge for up to two days Reheat gently so they stay tender Store toppings such as lettuce and tomatoes separately so they stay crisp Wrap extra tortillas in a clean kitchen towel to keep them soft for the next day
